Mary's Moroccan rice


Mary Breen’s moroccan rice is a dish found at every moroccan family gathering. From moroccan christmas to moroccan baptisms you’re sure to find a cheeky bowl of Mary’s moroccan rice on the table. Tastes like

Ingredients

  • 1 tablespoon of olive oil
  • 2 onions finely chopped
  • 3 carrots grated
  • 2 tablespoons of harissa paste
  • 300g basmati rice rinced
  • 600mls of chicken stock i stock pot
  • 400 g chick peas
  • 25g toasted almond flakes
  • 200g greek yogurt to serve.

Method

Heat the oil in a pan, add onions and cook for 8 mins.
Tip in the carrots, rice and harissa paste. Mix well.
Pour in the stock.
Bring to the boil, put lid on and simmer for 10 mins.
Fork in the chick peas.Cook for a further 3-5 mins.
Season, turn off and allow to sit.
Sprinkle the almonds over and serve with a dollop of greek yogurt.
